This morning I'm off to a good start, I have cleaned up the remaining mess from last night, and I spent a solid 45 minutes making lunch for Kenny and Jason; I have really been trying hard to come up with creative, tasty and healthy lunches for them both. Jason always tells me "just give me a sandwich" but that's boring, and I suspect - though he wouldn't dare admit it - that after a week of chicken sandwiches, he'd be supplementing his lunch with deliciousness from other eateries, and well, that would just piss me off.
So today they have roasted chicken (rotesserie) with a Tzatziki sauce I made this morning (diced cucumber, Greek yogurt, lemon juice, garlic, dill, salt and pepper)whole wheat pita bread, a variety of salad vegetables, cottage cheese with fresh blueberries, pretzels and a fruit roll-up.
I wish someone would make me lunch occasionally, and I'm not talking about the kind you have to go to a place, pay and they bring it to you... that defeats the point. It would just be nice to have a lunch, in a lunch kit. Hmmm perhaps I'm nostalgic for my younger school years, except then I was typically scared of what my mother had decided I needed to eat that day. She was/is a health NUT, seriously, and our lunches lacked that certain "fat kid" deliciousness that every child needs at least a couple of times a week. Saying that I'm fairly anal about what Nick eats, so I guess the gene was somewhat passed to me.
Before I get too far up on that pedestal however, know that I finished off a tub of vanilla frosting, using my fingers, last night, and that I'd only frosted 7 cupcakes with it in total... you can do the math on that one.
But, as usual, I'm off track. I have a plan for today. I have to go to work for a while - always "fun" seeing as Nick comes along with me, and I have to try and stop him from pissing off an entire office full of realtors while trying not to mess up the accounts I'm taking care of. My co-workers, for the most part, are a huge help though. They keep Nick entertained (usually with masses of sugar, I try not to dwell on that part!) and allow me to focus, at least for 10 minute stretches, on what I need to do. My boss just puts headphones on and listens to the cattle auction on his laptop and drowns out the 3 yr old office-massacre that is taking place.
The rest of the day is going to be spent taking care of my to-do list. It's shameful how much money I probably waste every month simply because I don't take care of things. It's little stuff, like I haven't read the weekend newspaper in about 2 months, but yet until last week I was too lazy to call them to cancel it. The same goes for a few other services that I don't use, that a 2 minute phone call would solve. Today is the day for at least some of that.
I'm not super-woman, but I think I can get a fair amount accomplished, and will feel better for it in the long run.
I'll update as to my progress and success later.
Oh, and I am going to attempt a picture a day, as in a picture of something/someone that I took during the day, and add it to my blog, regardless of it's relevance. excellent. Here is one from yesterday.
